I’m not a fan of banana. I dislike the squashy texture and smell. Unlike me, Chester is a huge banana fan. He can sense when someone is peeling banana 2 rooms away. But then hor, I’m a huge fan when it comes to banana cake.
This banana cake is a huge success with my family. 3/4 gone in just below 6 hours.

~Banana Cake Recipe~
Ingredients:
1 cup margarine
1 cup castor sugar
1 1/2 cup flour
1 tsp soda bicarbonate
2 eggs (beat separately in a bowl)
4 bananas Emas/Berangan (I use banana that I bought from roadside)
1 tsp vanilla essence
2 tbsp milk (optional; I didn’t add this in)
Directions:
1. Cream butter and sugar.
2. Add in eggs follow by mashed banana.
3. Add in vanilla.
4. Lastly add soda bicarbonate and flour spoon by spoon.
*5. When you have add the flour, mixture is thick. Add 1 or 2 tbsp of milk.
6. Bake at 160 degree C for about 45 minutes.
*optional
The cake texture is fluffy and light. Yum! I’ve already gotten 3 Ho Chiak thumbs up.

This cake make great treat for dogs too. Chester is following me everywhere… HELP!!!

looks so tempting.. i wanna grab a bite now! Yozoranitesky: i think the reason of your cake turn slightly sticky overnight is because add in too much of butter/margerine or eggs(?). or you put in somewhere that is not dry enough.. =)

Yes to banana cake/bread. The same in my house, too. Once cooled off, 1/2 the bread will be gone in 10 minutes.

hf, you could be right about the butter and the eggs. I will try to reduce the portion slightly, or better still, use che-cheh’s recipe
