
I’ve been eying this recipe called Caramel Shortbread Squares since Christmas. The fact that I’ve been putting it off is because of lack of positive conviction that I can make ‘em as good as the recipe’s photo (below). They look quite different from mine one above hor ?

But because I’m craving for chocolate so badly right now
it is indeed a good time to try it since this recipe call for chocolate.
~Caramel Shortbread Squares~
This cookie contains 3 layers; a shortbread crust, firm caramel center and a milk chocolate top.
Ingredients:
2/3 cup butter, softened (I use margarine instead)
1/4 cup white sugar
1 1/4 cups all-purpose flour
1/2 cup butter (again I use margarine)
1/2 cup packed light brown sugar
2 tablespoons light corn syrup (I use dark corn syrup)
1/2 cup sweetened condensed milk
1 1/4 cups milk chocolate chips
Directions:
1. Preheat oven to 175 degree C.
2. In a medium bowl, mix together 2/3 cup butter, white sugar and flour until evenly crumbly.
3. Press into a 9-inch square baking pan. Bake for 20 minutes. I use a 9-inch round pan instead since I don’t have a square pan.
4. In a 2-quart saucepan, combine 1/2 cup butter, brown sugar, corn syrup and sweetened condensed milk. Bring to a boil. Continue to boil for 5 minutes. Remove from heat and beat vigorously with a wooden spoon for about 3 minutes.
5. Pour over baked crust (warm or cool). Cool until it begins to firm.
6. Place chocolate in a microwave-safe bowl. Heat for 1 minute then stir and continue to heat and stir at 20-seconds intervals until chocolate is melted and smooth. Here I use another way by melting chocolate chips on a bowl over a boiling water saucepan. Much easier.
7. Pour chocolate over the caramel layer and spread evenly to cover completely. Chill.
8. Cut into 1-inch squares. These need to be small because they’re so rich.
I made 2 mistakes though. I shouldn’t have chilled it in the fridge overnight. It makes the shortbread less crispy due to moisture. Plus, I didn’t wait too long after removing from the fridge for the cutting. Result? My shortbread and chocolate crumble easily. I think I will not chill them next time. I will leave it on the table for few hours before cutting.
Oh and I forgot to grease my baking pan. No problem luckily.

This recipe is very easy (cooking time about 25 minutes) and they makes wonderful afternoon snacks. Try this recipe and tell me you like it.
I love all the 3 layers. They’re delectable units. Yummy Yum Yum! My family said ho chiak is ho chiak but they’re too sweet. I asked which layer is sweet… they said the caramel layer.
Caramel is suppose to be sweet lor because they’re made of sugar.
Nothing I can do about it. Just try cutting them into small pieces so that your teeth can tahan. hehe
