The Making Of Kuih Kapit aka Love Letter

From my weekend plans, I managed to make kuih kapit, cleaned, polished and vacuumed my car, washed Chester’s cloth and toys and watched MU vs Liv match. Wohoooo! 3 pats on my back.

Now to my main agenda; The Making Of Kuih Kapit aka Love Letter. The love letter recipe was provided by my dear grandma. We started to prepare the batter at about 11am on Saturday morning.

I only explain how to make the batter as I guess the rest of the procedures are quite simple. All you need is the love letter mould. We bought 4 moulds at RM5 each recently.

Love Letter Batter:

First, add water to the grated old coconut (we bought 4 old coconuts coz the shop don’t want to sell 3Β½; why need old coconut? old coconut are more oily).

Then, pressed the grated old coconut into a bowl. That’s the first batch of coconut milk aka santan. You will need that ‘thing’ that my sister was holding in the picture below. Repeat by adding water again to the coconut. Make 3 batches of coconut milk with the first batch containing the thickest coconut milk and so forth.

Next sift plain flour (600g) and rice flour (3 spoonfuls) into a bowl. Add in granulated sugar (600g) into the bowl as well. Slowly stir while adding 4 eggs (egg yolk only) + 8 eggs ~ well beaten. After that add in the first batch of coconut milk and stir slowly with “HAND!!!” until well blended.

My sis and grandma asked me twice whether I can cope with the stiring as we need to stir for quite some time. FYI, I’m known as a lazy bone at home.

-the end of batter making-

At around 4pm, I started the charcoal burning in less than 5 minutes (hehehehe) by using dried leaves, candle and used joss-sticks (stick only).

Left pict: Here’s our little project: making kuih kapit. Sis is sitting on the left doing the pouring of the batter into the kuih kapit mould and checking whether the kuih kapit is done (doing 2 jobs as I was taking the pict). Grandma who is sitting on the right is in-charged of folding the SUPER HOT love letter in a fan shape. Everyone of us changed our job function occasionally.

Right pict: Poor Chester can only smell and watch from afar. Kekekeke. Eventually we gave him some ‘mess up’ love letter. Mess up mean folding the love letter too slow until we cannot fold it into a fan shape because it cools down already.

My grandma was smiling when I was taking her photo. You know why grandma smile? Because she was nagging at me. Every time I said ‘hold on grandma, I wanna take photo, ‘grandma said ‘aiyooo why wanna take photo’.

Taaa Daaaa!!! The end product. Nice ar? Sorry the pict is quite blur and I’m too lazy to take another picture. I’m a bit dismay as most of the love letters look horrendous (like Simon Cowell say). Horrendous in a few ways. πŸ˜› Anyway, we managed to fill all the love letters into 1 big empty Fernleaf tin. The good news is it taste wonderful.

At one point I was asking my sis… (the batter nearly finish)
me: sis, are you done? let’s stop now.

sis: hey I just had a deja vu.

me: what? that I told you to stop and you stop and we all clean up?

sis: no. that you told me to stop but I said I wanna go on until the batter is finish.

me: so you wanna stop now?

sis: no. i wanna go on.

me *in my mind*: shit!

We finished our batter nearly reaching the 11 hour mark. Fhewwwwww! Umphhh actually we didn’t finished all the batter. There were some left (about HALF cup full). Alas sis didn’t managed to make her 1 last love letter as the charcoal had cooled down. huhuhuhu…

Lessons of the day:

1. Pick/buy more comfortable stools as 3 butts ended up pain till the ass.

2. Wear gloves as all our hands were red and battered.

3. Always make 1 round of batter is enough like this time (just for ourself). Many years ago we make 3 round of batters for ourself and cousins. We didn’t sleep that night.

p/s: 600g = 1kati

One tip I would like to share – dunno if it’ll work for you as it did for me – after umpteen years of practice, long nails always come in handy be it folding or peeling those little buggers off.

Btw, how come some are a bit tad too white eh??? ^_~

  • Reply narrowband January 25, 2006 at 11:59 pm

They’re delicious!! My grandma used to make them too, and I helped out no more than 5 times. Mainly helped with ‘folding’ the hot pieces of kuih kapit, before they became too cold and hardened up. Poor my skin.. Really took a lil getting used to. I remember I watched my grandma folded those hot kuih kapit with great admiration…!

  • Reply Che-Cheh January 26, 2006 at 10:13 am

    Dreamcatcher, did I tempt u ?
umphh not exactly 12hrs…we did stop for awhile after the batter making and baking.

Yvy, yeah! I like to be the ‘folder’ too.

Narrowband, Hahahaha. My grandma was ‘oohhh ahhhing’ when she folds the kuih kapit. LOL

Please tell me from where did you buy the kuih kapit moulds. I would like to get some for myself. Thanks.

  • Reply Che-Cheh October 13, 2006 at 8:36 pm

Hoo Chon Lye, hello there. I bought mine at a shop near my house. You can go to Giant/Tesco/Carrefour (forget which one is selling) or search for shop that sells plastic and plates or baking supplies shop. Most probably they will sell kuih kapit moulds too. Hope this help. πŸ™‚

  • Reply Che-Cheh December 29, 2006 at 7:50 am

Yung, hello! I’m sorry I’m unable to help you as I’m not from the States. But I can give you some suggestion. You can try out those shop at Chinatown selling cake/bakery supplies or those shops that sell kitchenware. πŸ™‚
